Rava Idly

Ingredients:
Wheat sooji/rava (medium thick)-1 cup
Mustard seeds-1/2 tsp
Chana dal-1 tsp
Grated and crushed ginger-1/2 tsp
Green chilies(finely chopped)- 2 to 3
Soda-1/4 tsp
Carrot(grated)-3/4 cup
Cashews(optional)-5
Yogurt-1 cup
Cocunut(grated)-1 tsp
Cilantro-few
Oil-1 tsp
Salt-to taste

Method:

1.Roast Sooji till nice aroma comes out.
2.Heat oil in a pan and add mustard seeds.When they start popping add ginger,green chillies and channa dal and fry for sometime.Switch off the stove and immediately add sooji and mix well.
3.Add salt,soda,carrot,coriander leaves,yogurt and mix well.Leave it for 30 mins.
4.Grease an idly stand.Keep half cashew,sliced tomato and then put the mixture on the top (so that when the idlis are removed,cashews & tomatoes are seen at the top).Steam it for 12-15 mins.

Beetroot Halwa


Ingredients:

Beetroot (peeled off, washed & finely grated)-1Kg
Sugar -2-1/2 Cups
Milk (boiled)- 1/2 Litre
Water (sufficient to boil the beetroot)-2 to 3 Cups
Cashew nuts-8
Raisins-8
Ghee-2 tbsp

Method:
1.Pour water in a pan and add grated beetroot.
2.Put a lid on the pan and simmer until water gets evaporated.
3.Add sugar and half of the milk,stir constantly until the mixture achieves a thick consistency.
4.Now add ghee and stir well.
5.Add the remaining milk and simmer again for just 1-2 min on low heat.
6.Take off heat,garnish with cashew nuts and raisins.
